Illex Illecebrosus (Summer Squid)

Other names: Short-finned squid

Illex is a fast growing squid caught in the deep waters of the Northwestern Atlantic Ocean.  Our Illex squid is landed from late May throughout the fall and is packaged in roughly 27 pound (12kg.) boxes. The blocks are hand laid, with a plastic sheet  applied to the top of the block to protect it from freezer burn.

The size of the squid varies greatly from the beginning to the end of the season. May production is typically 50 grams each in weight with tube lengths of 14-16 cm.  By late September sizes have increased to averages of 350 grams and 20 cm.  The squid is packed in whole, round form.

OTHER NAMES: Slime Eels

While sometimes called slime eels, hagfish are actually not part of the eel family. They are one of the oldest types of fish in the sea, going back over 330 million years.   Hagfish hides are processed and sold as eel skin leather.  The meat is used for food and is consumed mostly in Asia.

Hagfish are harvested year round in the waters of the Northwest Atlantic Ocean.  They are caught in barrel traps, then processed, graded, and frozen on board.   Frozen blocks are 11 kg on average.    Sizing is approximately 9-10 fish per kilo.
